The Story Behind

BRASSERIE ECOSSE

Discover Brasserie Ecosse, a 200 cover brasserie and bar, which has been voted one of Dundee’s top five restaurants, showcasing the talents of head chef Scott Cameron. Opened in 2018 and run by a close-knit team with a passion for service and the finest food and drink – including the most incredible cocktails, personally created by general manager Nikos Matsikas – Brasserie Ecosse is also the perfect venue for unforgettable events, parties and bespoke weddings.

We hope you’ll agree that the look and feel of the restaurant space is very memorable – cool and sexy, yet understated at the same time. We love our egg chairs, our wall of live succulents, and our beautiful champagne wall! We have a buzzy, informal atmosphere, with service which is highly attentive, but we don’t do pretension, so you can relax. We just want you to have a great time! After all, our slogan is “arrive as a guest, leave as a friend!”.

General Manager

NIKOS MATSIKAS

There may be less A-list celebrities in Dundee than in the 3 Michelin star Manhattan and Chicago restaurants where Nikos Matsikas refined his craft, but the customers at Brasserie Ecosse, where he has been the general manager from the initial launch, are given the same level of VIP courtesy and attention by Nikos and his whole team. Nikos, who is originally from Chicago and of Greek heritage, brings a wealth of global food and beverage influences to his role at Brasserie Ecosse.

His time working in the Uniteed States saw him look after the likes of Barack Obama, Johnny Depp and Jennifer Aniston, to name but a few. Time in Greece was spent spearheading luxury five-star resort multi-food and beverage outlet operations for leading hotels of the world, before coming to Scotland to occupy senior food and beverage management roles at Gleneagles and Malmaison.

“I do not just want to ensure I am giving a five-star service, but aspire to train other young locals in Brasserie Ecosse to do so too. The industry has always faced criticism that not enough homegrown talent features in the market – well now is the time to change that, but young people need the proper cross-training to understand every aspect of running a venue such as ours, together with the right mix of mentoring.”

Head Chef

SCOTT CAMERON

Scott Cameron has occupied senior positions at some of Scotland’s leading restaurants and hotels, including Chez Roux at the Rocpool Reserve Hotel in Inverness, and was instrumental in the restaurant gaining two AA Rosettes. He has cooked for Alex Salmond and visiting dignitaries at Bute House, plus members of the Royal Family.

Scott’s vast knowledge of cooking techniques from cuisines around the world make the culinary experience at Brasserie Ecosse worth a detour.

“When I first entered this industry, I had to leave Dundee to access the skills I needed. We want to retain young talent in the city, our youngest chef, Jordan, has been here for two years now, starting by helping to prepare vegetables for the general kitchen. Now he is running his own section and has developed really well since coming on full-time after finishing his college tuition. Dundee is now home to some amazing restaurants to rival the best in Edinburgh and Glasgow.”

Extraordinary

FOOD AND DRINK

Brasserie Ecosse respects the world-class Scottish produce it uses in its menus, in the words of head chef Scott Cameron, “Treating it well and not getting too “out there” with it. We want to keep things very simple and elegant. The key to that is, if we’re going to do something simple, it has to be outstanding”.

Scott’s extensive background in French and Asian techniques, but with a Scottish Twist, is evident in dishes such as Chicken and Duck Liver Parfait with Rhubarb, Shitake Mushroom and Garlic Ramen, and Cod, Confit Chicken Wings, Sweetcorn, Crepes, Curry and Miso. Delicious flavour combinations cooked with passion. All meat, including dry aged steak, is provided by renowned butchers Gilmoure’s.

A fan of artisan cheese producer, Strathearn Cheese, Scott uses their cheeses in his Scottish Cheese Plate, and separately heroes The Lady Mary cheese in a starter with tomato textures and Bois Boudran.

When it comes to dessert, diners will be spoilt for choice with a decadent selection of choices including one containing one of Dundee’s most famous exports – marmalade. The rich Dark Chocolate, Ginger and Tofu Ganache is served with an innovative marmalade sorbet for extra zing.

Scott’s passion for championing Scottish produce is shared by general manager Nikos Matsikas, “I’ve lived and worked in many different places around the world and I’ve always used Scottish produce. I’ve been promoting it for the last 15 years, especially the whiskies, the Black Angus beef and also the seafood that surrounds Scotland, it’s phenomenal! Our favourite whisky of the year is a Deeside whisky single malt liqueur called Haroosh, which is made with bramble berries and wild honey.”.
